A piece of fish upon your dish, with beans to fulfill your every wish.
INGREDIENTS
Fish
- Rainbow trout
- Soya sauce
- Maple syrup
- Ginger, finely chopped
- Garlic, finely chopped
Rice & Beans
- Rice, whatever kind you like (I used basmati)
- Olive oil
- Black beans, canned
- Shiitake mushrooms, chopped
- Oyster mushrooms, chopped
- Red chili peppers, sliced into rings (keep the seeds in, you coward!)
- Yellow onion or shallots, chopped
- Ginger, finely chopped
- Garlic, finely chopped
- Soya sauce
- Miso paste, few spoonfuls
- Gochujang, few spoonfuls
Garnish
- Green onion, chopped
- Sesame seeds
COOKING
Fish
- Pre-heat your oven to 200°C (~400°F)
- Get a large deep-rimmed baking sheet/tray/vessel
- Place your trout pieces into the vessel
- In a bowl, pour your maple syrup and soya sauce, and add the ginger and garlic. Stir together. It should be enough to about three-quarter submerge the fish pieces. Taste test the ratios to your liking
- Pour the maple-soya mixture over your fish
- Cook for about 30 minutes or until fish flakes easily when forked
Rice & Beans
- Put X units of volume of rice into a pot with 2X units of volume of water. Crank stove to high until water boils, then bring it to low and cook for 20 minutes
- Get a frying pan (cast iron is the best, fite me irl 1v1 on twitter) on medium-high heat, get it oiled
- Add your chopped mushrooms, cook them ~4 minutes, stirring periodically
- Add your chili peppers and yellow onions/shallots (maybe even some of the white bits from your green onions), cook them until onions become translucent, stirring periodically
- Add garlic and ginger, stir them in
- Add black beans with the canning liquid
- Add miso paste, gochujang, and soya sauce
- Cook until liquids have reduced into a thick sauce

Plating
- Put a few spoonfuls of rice onto your plate, even it out into a flat pile occupying no more than half the surface of the place
- Put your beans atop the rice
- Next to the rice & beans, put a piece of fish
- Garnish with green onion bits and sesame seeds to your liking
